Does anyone know if we have any sort of training that civilians can attend like low light classes, using your vehicle as a shooting position and concealment?

To answer your question, Yes. There are many options. To keep from typing a long list of possibilities, you should start by telling us about your current level of training and experience. Have you ever had formal training? Do you shoot competitively? What do you consider your current level of skill to be? What do you think you want to learn?
How far are are you willing to travel? How many days would you devote to a class?
There are classes you can take such as the NRA Personal Protection Inside and Outside the home which are nice basic introductions to what you seek. You can also get involved with some of the tactical shooting sports such as IDPA which help reinforce those concepts.
IDPA would be a good way to find out where you stand. It'll test your reaction and shot placement. I've been meaning to make it to the matches, but every time there is one, I end up being at work for some sort of exercise.
