Updated some information here. Most importantly, I forgot to mention in the original write up, the fact that as spring progresses, the flavor of the wild leek becomes more mild.
If you tried wild leeks earlier this spring but were chased away by the potent flavor, try them again. If you dig one up and the bulb has swelled to about the size of your pinky finger, you may find the taste more pleasing.
Ramps are something like $20 a pound at farmers markets in north eastern States along the Appalachian Trail.
They are considered a weed by those who don't appreciate them.
Please consider gathering a small amount from several patches instead of wiping out an entire area.
