    ECB being the acronym for El Cheapo Brinkmann Smoker

    Bird went on the smoker at 4am. Anyone else smoking a turkey this year?

    I'm a novice but enjoy process.

    I used Pioneer Woman's brine, and then seasoned the skin with some John Wayne poultry mix. I'm also using lump & briquettes combo & smoking w/large pecan wood chunks.

    Just curious to hear some ideas.
    Happy Thanksgiving all, & say a prayer for all of those in uniform, separated from family today.

    I wasn't asked to smoke a bird this year so I'm not. I did pick up a couple of bone in breasts the other day though. I'm going to smoke one of them tomorrow or Saturday to have sammich meat for next week. There isn't usually much left of the T day bird.

    I do one every year. I prefer to spatchcock mine, cooks more quickly and evenly in my experience. Basic rub, some evoo with garlic powder and kosher salt. Takes about 2.5 hours at 350 degrees in my drum smoker.

    I want to try this method. I watched a chef on periscope last night talking about his method of spatchcock with a jerk rub/injection and smoked w/cherry wood. That one's definitely going on my to-do list.

    It's always a hit at my house, although i've never tried injecting. We use a little bit of apple wood.

    Just finished a 14lb turkey in around 2 hours. Now it's resting under foil.

    I cheated and bought a presmoked turkey.

    Threw that bugger in the oven and just pulled it out. have to let it rest while I make sides.

    Been reasonably productive today. Going to open some vino.
