I would say the standard chili I cook uses ground beef or ground bison. Both are great and have enough fat content to relay the "kick" and delay it properly until you finish the bite. I do not mind those who use both sausage and beef,it has a similar ability with carrying the taste.Should chili have beef in it? Or Chicken? Or Sausage? Or all of the above? Or…?
Chicken can be used, but it's usually in a "white bean chicken chili" and really doesn't resemble what most would call "chili". It's okay, but it's not really chili. I have never had a chili with just sausage. Not sure how that would go. I suppose it depends on the sausage itself more than anything.
Chicken is just a no for me,to lean to properly carry the flavor and spice of a good chili and even shredded the texture is just all wrong.
